Recipe: Really Easy Healthy Tumeric Chicken

Now the weather is cold (read: freezing), salads are just not cutting it anymore. I’m living on soups and pretty much anything hot, however, with Christmas coming up I’m aware that I need to make sure I’m not completely off the healthy-eating wagon! I’m also super busy with my teacher training so I usually don’t have much energy to cook after school, so I’m always on the hunt for easy, healthy recipes.

Schwartz, he largest producer of food seasoning, herbs and spices, recently got in touch to see if I’d like to work with them on creating a recipe using Tumeric, so I thought I’d use the excuse to get busy in the kitchen! I ended up playing around and after a trip to Tesco, I came up with this really easy, healthy, no-carb tumeric chicken recipe. It was really good, the photos really do not do it justice! 

Recipe (for 2)

2 chicken breasts, diced

Fry light

1 1/4 teaspoons tumeric

3/4 teaspoons ground cumin

Pinch of salt and black pepper

Tin of chopped tomatoes

Pinch of fajita seasoning

Cauliflower rice (I found mine in frozen packets in Asda)

Method

  • Heat up a pan with some fry light.
  • Dice the chicken breasts and pop into the pan – sprinkle over the tumeric, cumin, fajita seasoning, salt and black pepper. Cook until no pink remains. 
  • Add in a tin of chopped tomatoes and simmer for ten minutes, occasionally mixing to thicken up the dish. 
  • If you have cauliflower rice frozen packets, all you need to do is put them in the microwave for around 3 mins each (look at the packet). 

And that’s it! Seriously easy, fast and healthy.
